I know...
I sounds crazy, and left me without words! I love and cook salmon - coho, wild - the traditional way!

Well once in Italy, at a friend's home when she was planning to have salmon served at this VERY small dinner. BELIEVE me for more than 700!

Since my husband and I had spent a year in Canada(B.C.) where we eat salmon often , she wanted my expert input!

So, all this salmon from Norway is just there waiting for my suggestion. I look at her, at the cooks and have no idea what to say. I do not see 700 special tegame to cook salmon!

She started laughing and tells me: this is the way we do it for 700!

Roman recipe:

1- (700) Salmone. Bene squamato, aperto . Conditele internamente con sale, pepe, succo di limone, vino bianco secco, burro, capperi, ecc.
2- Several packages of strong aluminum foil.
3- A good modern dishwasher with temperature e timing control.
4- Wrap each salmon in foil, very well, closed and firm. Important!
5- Place each salmon in the dishwasher's horizontal trays, about 8 at a time! Multiply for 700!
6- Time the dishwasher for 3 and half minutes, at 90 degrees C. AND GO!
7- Remove immediately, place on a humid linen napkin, on a silver tray and give to the dozen or so cooks to decorate!.

When I told my B.C. friends - guess what they asked? How much soap?!!!

It is crazy, but it cooks the salmon to perfection- never over 3 and half minutes!.

For 700? Wow, that is incredible Aether....
(but could you perhaps edit and translate 'item 1' on the instructions for our non Italian friends)?

That reminds me of the time in Milano when we had to cook a huge zampone (stuffed pigs trotter) in our upright washing machine (minus the 'agitator' of course)... That was a work of art too! Whistle

I thought it was crazy, and it happens once a year, at the same place for the same guests - well, perhaps the guest list may change, but not much...

To be precise it is :To serve 700...1- Just the normal removal of scales and head. Open, and marinate with lemon juice, white dry wine, salt, pepper, capers, and other spices as one likes. That is all. Decorate the traditional way.

And it is a complete luncheon menu ...Sorry, can not say who the hosts are, where, or the guests. No, it is not at the Circolo della Caccia...

No, the secret is not out! However, I gave you A HINT! OK, you don't live in Rome. Lets ask LivioMoreno? He is in Rome and may figure it out, or may not!
OK! Another hint : June 29!

No joking - to see the bears feeding in B.C.'s rivers is something else!

My wife cooked a nice piece of Pacific salmon in the oven last night. She laughed when I mentioned the dishwasher.

OK - OK... then if it's NOT the 'TBP' then there are perhaps three other possibilities that I can think of.

1. If it was held on a "Mount" - did they distribute any 'loaves' with the fishes'?

OR

2. It was to celebrate Quebec's 400th Anniversary.

OR

3. Just maybe it was to celebrate the 'Founding of Rome'... right?
