A quick, easy and tasty soup to make and please all the family!
For 6 servings.
1 red/green/yellow pepper
2 large cloves garlic
2 lt. Chicken or beef stock (or stock made from 1 1/2 stock cubes (like Knorr)
'Pinch' of chilli powder - if desired!
Peel/clean all the vegetables
Cut into small(ish) pieces.
Place in a pressure cooker with 2litres stock OR stock cubes.
Place in a large saucepan if you don't have a pressure cooker.
Pressure cooker - 8 minutes at full pressure.
Saucepan - 20 mins
When the vegetables are cooked use a hand blender to 'puree' the soup
