Really easy to make at any time of the year - but you can eat a ton
of it and it's only about 350 calories!

Quantities are all 'as required' and you will need:
Baby lettuce leaves (or normal ones in strips)
Tinned tuna in brine (NOT in oil) N.B. For one person I would use approx 100g of drained tuna.
Extra virgin olive oil
Slice the onion really fine, add the tomatoes cut in small 'chunks' add (at least) one heaped teaspoonful of dried origano. Put these all in a large bowl and at this point add the vinegar and oil to allow them to absorb the origano flavour.
Drain the tuna, and was the lettuce then add to other ingredients and mix well ensuring that the tuna is well broken up.
Serve with crusty bread and (if you like) a glass or two of chilled white wine (something like a 'verdicchio')
Then ENJOY without feeling guilty!"
