One of my favorites and very easy. Very Happy

Pre-heat oven on 350 for 45 minutes


Get 6 plump chicken breasts
Two packs of any brand of rolled goat cheese.
Put three eggs in a dish and beat.
Chop some fresh basil.
one small bowl of Italian flavored bread crumbs.

Butterfly [slice open] the chicken breasts.
In each one, place some goat cheese as well as some of the cut up basil
[say a tsp full]
Close breast and dip it into the beaten three egg yolks,then dip in the Italian bread crumbs covering all the way around.

Do this with all 6 chicken breasts and place them all on baking pan.

Bake on 350 for 45-50 minutes.

You will have plump , juicy chicken breasts oozing with goat cheese and tons of flavor!

You can substitiute ricotta cheese if you don't like goat. Very Happy

You'll thank me for this one!!!! Ciao!

Wowww!
I can eat ALL of that Yahoo... and I usually have all those ingredients in the house.

So this is a definite for this weekend I think chef - perhaps with a side salad of baby lettuce leaves, tomato, origano, onion with balsamic vinegar and EVOO.... OOH - I can't wait for Sunday! Yahoo

Thanks Debra,
I am going to try the recipe and let you know.

I guess we could do also a vegetarian version with eggplants instead of chicken... I am not vegetarian, but my daughter is so I always think of alternate veg dishes.
