For those who enjoy Indian food, a Hindu friend of mine in England sent me this personal recipe for her 'own' samosa's.

Samosa Recipe.

Pastry:
2 cups of Plain Flour
1 tsp Salt
5 tblsp Oil (veg or sunflower)
7/8 tblsp water (cold)

Filling:
5 medium Potatoes
1 cup Peas
1 large Onion (chopped)
1 tblsp finely chopped garlic, ginger and green chillies (you can use powdered if you don't have fresh but only only level tbsps of each)
2 tblsp chopped fresh coriander
5 tblsp oil
1 tsp salt
1 tsp garam masala.....if you don't have this use ground cumin/coriander

Pastry: Mix flour,salt and oil. Rub in oil with finger tips.
Then add water and bind to make a strong dough...add more water if necessary
Knead until smooth and then leave covered in fridge for 1 hour

Filling: Peel, cook potatoes and very lightly mash them. Lease aside.
Fry onions in oil until golden brown. Add garlic, ginger, peas, green chillies, coriander and salt.
Cook for about 4 mins. Now add potatoes and mix well.
Leave aside till mixture is cool.

Divide the dough into 13/14 pieces. Roll each piece in hands and then roll out to form circles
about 6" in diameter. (Use plain flour to dust board and rolling pin). Cut the circles in half.
Form a cone with each piece by overlapping by a third. Use water to seal overlap. Then fill with about
2 tblsp of filling. Wet the insides of the top of cone and seal with finger and thumb.

Heat oil and deep fry, lowering the heat to cook pastry slowly............Enjoy !!!!!!!!

You can freeze these. To freeze. Lightly dust a tray with flour and lay out individually and when frozen put them into a bag.
